Zuchini Apple Bread




I've never really tried the zucchini bread, or enjoyed nuts in my breads, or even baked much bread...but that all seems so silly now.  So this morning I woke up, made my coffee, opened the blinds to the lake out back and the ducks swimming around.  I decided it should smell like baking.  I have been dying to try a zucchini bread and this morning seemed the perfect time. 

Here are our supplies!!!



I forgot to toss the salt in there. Actually, Salt is the thing I always forget to take a picture of.  Bare with me, the more I post, the better my pictures will be. 



Let's toss all our dry stuff together, flour, baking soda, baking powder, salt, cinnamon!



Now, let's shred up a zucchini.  I peeled off the sides first and then shred it up and put it in an paper towel to get some of the moisture out.  We will have plenty moisture, trust meh!



Next, toss the eggs, sugar, and oil together.  Then add in the vanilla and zucchini!


Then the yummy cup of applesauce.  I am betting we could even use the flavored applesauce out there and really mix things up!



Lets mix in the dry with the wet and then toss in a cup of the pecans!!!



It makes enough for two bread pans or one large cake pan but this is BREAD so we put it in the bread pan...got it??!!



So I finished it after an hour in at 350 degrees and I forgot I needed to take a picture of it and cut off a pice and BIT INTO IT...See my teeth marks??

Ingredients


3 cups all purpose flour
1 tsp salt
1 tsp baking soda
3 tsp cinnamon
1/2 tsp baking powder
3 eggs
1 cup oil
1 3/4 sugar
1 cup applesauce
1 cup shredded zucchini
3 tsp vanilla
1 cup chopped pecans

Preheat oven 350 degrees. Grease bread pans.
Combine the flour, salt, baking soda, baking powder, and cinnamon and set aside.
In another bowl combine the eggs, sugar, and oil and mix together until blended.
Add in vanilla, applesauce, and zucchini.
Mix wet and dry ingrediants together until well blended and then toss in nuts.
Combine then pour into bread pans.
Bake for 1 hour at 350 degrees.
Slice....eat...sigh with contentment!
